    On a March night in San Francisco, in Benu’s minimalist cloistered dining room, a server dressed in black approaches a couple of diners seated at the cloth-free tables. Removing the cloche from a delicate porcelain ensemble custom-designed by Korean-based manufacturer KwangJuYo, she presents them with faux “shark’s fin” soup, part of chef/owner Corey Lee’s $160 12-course tasting menu.
