Chef John Fink’s Whole Animal Cooking features Farm-Raised Meats Cooked Over a Flame: The Whole Beast twas launched to offer local meat and seafood lovers a unique feast for their tables as well as for special events like SF Chefs and Outside Lands. Fink says, “Heritage meats prepared whole are incredibly flavorful, and each part has it’s own unique taste and tenderness,” and there is no waste as all parts of the animal are cooked and utilized. Depending on the dish, Fink employs a custom outdoor BBQ where he can cook an animal whole, or his new "Beast," a Southern Pride smoker on wheels, as well as slow cooking in an oven.
