Head Chef - La Mar Cebichería

With broad experience earned from an early age, this young Peruvian chef of Japanese roots has learned to carve out his own niche among Peru’s most promising chefs. From his beginnings he has had the hand of recognized chefs like Gaston Acurio. Diego was part of the opening team in the first La Mar Cebichería at Lima and since then he has participated in the opening of the restaurant abroad, among them Mexico City, San Francisco and currently Bogotá. In 2009 he was sent by Prom Peru (Peruvian Commission to Promote Tourism) to represent the country at the Madrid Fusion gastronomical summit. In Italy in 2007, he took first place in the famous Girotonno gastronomical competition held in Cerdeña. Diego is also a professor in schools of cuisine in Peru. Among these is the Pachacutec foundation school. This institute’s main promoter is Chef Gaston Acurio, who chose Lima’s poorest area to set up a school of cuisine in Peru, in order to give the underprivileged young an institute with leading instructors. In short, Diego is a promising youth for modern cuisine.
